A Tartine Style loaf made with a combination of enriched white and whole wheat flours.
This loaf is naturally leavened and hearth baked to give it a rich brown crust. Its high hydration gives it an open crumb which, when combined with its large size, gives it excellent keeping qualities.
The loaf takes three days to make from start to finish. This allows ample time for the sourdough starter to work its magic and create a wonderfully complex sour taste.
An excellent choice with soups and pastas, it is ideal as a table bread with any meal. It makes great avacado toast and can also be used for delicious sandwiches. Serve with some fresh country butter or use balsamic vinegar and extra virgin olive oil for dipping.
Store the loaf cut side down on the counter to preserve its crusty nature. Keeping it in its craft bag will help keep it from drying out. Wrapping it in plastic will extend the life of the loaf but the crusty outer shell will soften. Cut the loaf into smaller pieces, wrap them in plastic and freeze the pieces if the loaf is too big to be consumed right away.
